Ingredients- 

  • 1/ 2 tablespoon oil, or butter
  • 2 eggs, beaten
  • 2 slices whole grain bread, toasted
  • Uptown fresh Microgreens
  • 1/ 4 avocado, mashed
  • 1 tablespoon pesto
  • 2 tablespoons shredded cheddar cheese

Instruction- 

  • Heat oil in a small skillet over medium. 
  • Pour in eggs and reduce heat to medium-low. 
  • Cook, stirring occasionally, until reaches desired doneness.
  • Spread avocado and pesto on bread. 
  • Top with cheddar, scrambled eggs, and microgreens.
