Rainbow Chard Sag Aloo Curry

Ingredients- 

  • Uptown fresh 6 stalk of Rainbow Chards
  • 1 onion medium sized, sliced. 
  • 4-5 potatoes medium sized chopped 
  • 4-5 tomatoes, chopped
  • Grated ginger 
  • 4-5 crushed garlic cloves 
  • Small glass of water 
  • Oil 
  • Salt 
  • 1 tsp mustard seeds
  • 1tsp of grounded cumin 
  • 1 tsp grounded coriander 
  • 1/3 tsp of chill powder
  • 1/2 tsp of turmeric powder 

Directions- 

  • Take a medium sized pan, heat the oil add the mustard seeds. 
  • Now add a couple of sliced onions. Till the onions are cooking, peel the ginger. 
  • Once the onions are soft and golden brown, grate the ginger and add the crushed garlic cloves. Let it cook for 1-2 minutes. 
  • Now peel the potato, cut them into cubes and add it to the pan. Them the mixture coat the potatoes. 
  • Now add a small glass of water & cover the lid, let it steam for 10 minutes. 
  • Till then chop the tomatoes and the chards. Separate the stalks and the leaves of the chard. 
  • Once the potatoes are almost cooked, add in the tomatoes and the chard stalks. 
  • Stir and cover the lid. Let it cook for 5 minutes or until the tomatoes are jammy around the edges. 
  • Now add the all the spices, 1 tsp of grounded cumin, 1 tsp of grounded coriander, 1/3 tsp of chilli powder and 1/2 tsp of turmeric powder. 
  • Season it with salt and give it a good mix. 
  • Now add the chard leaves and let it cook for a couple of minutes until the chard leaves shrink. 
  • It’s ready to serve with some hot chapatis, a little bit of pickle and some yogurt.
