Cream of spinach soup

This fresh spinach soup is wonderfully nutritious and delicious. Making it an ideal light lunch or a great starter for dinner.

Ingredients- 

  • Uptown fresh 1 big spinach 
  • Boiling water for blanching 
  • Ginger 
  • 1 tbsp Mint leaves 
  • 1 tbsp Butter 
  • 1 tbsp wheat flour 
  • 500 ml milk 
  • Salt to taste 
  • Pinch of black pepper powder 
  • 1 tsp Sugar 
  • 1 bay leaf 
  • 2 tbsp fresh cream 


Direction - 

  • Blanch the entire bunch of spinach for 2 minutes. Then dip it into cold water immediately. 
  • Take the spinach, ginger and mint leaves and blend it together until you get a fine paste.
  • Take a pan and add the butter and wheat flour to it. Sauté until you get a Sandy texture. 
  • Next, add milk and whisk continuously to avoid lumps. 
  • Add the salt, pepper, sugar and bay leaf. Cook until the sauce thickens. 
  • Add the spinach purée and whisk everything. Let it cook for 2-3 minutes.
  • Add fresh cream and mix well. 
  • Your hot cream of spinach soup is ready.
